31st Oct 2010: Happy Halloween!!!



This is a really last minute Halloween thing that I wanted to do before the day ends. There isn't an actual recipe for this. I guess it all draws down to what you fancy and how you allow your baking imaginations to flow. I stumbled upon a blog which adapted this idea for Halloween and i thought to myself - "Hey, that would be fun!" 

So I did. I only manage to come up with 5 eyeballs with leftover scratch. Instead of using the white chocolate to cover the balls - I used white chocolate glaze. For the red veins - you can use some red gel coloring and draw the lines with a toothpick. I used my leftover wild fruit coulis for the veins and pile of blood. Taste much yummier with the wild summer fruits!

28th Oct 2010: Chocolate Royale


This is one of a fun cake! Really chocolaty. With two layers of Sacher biscuit and chocolate mousse all over.

Just if you're wondering why the cake come in half .. well it's actually presented in two forms of a cake. One parts heavenly glazed with chocolate and the other half graciously sprayed with chocolate.

4th Oct 2010: Passionata Perfect!

I am so proud of myself this time! Not only i managed to complete the cake with self satisfaction - this time there's no land slide or whatsoever. All perfect to me. Although i must say it is quite hectic because this cake requires 5 components to come in as one. For people who digs raspberry and don't fancy something too sweet. This is one yummy choice. P/S: Nothing happened to my finger. It's the spatula that looked like a bandage on my finger. 

After removing the mold - this is how the cake looks like

A touch of raspberry for decoration sprinkled with icing sugar - unfortunately, the icing sugar would melt like caramel in matter of minutes. The next time I should probably use snow sugar instead.

Passionata - rimmed with Joconde biscuit, two layers of coconut dacquoise on the bottom and middle. Bottom mousse - passionfruit. Top mousse - raspberry. Glaze - raspberry. Deco - fresh raspberries!

1st Oct 2010: Tart Chocolate Praline

Chabloner the tart. Sealing the picquer with the chocolate keeps the ganache from seeping away!
