31st May 2010: Paris Brest (Choux Pastry)




A dessert that took it's name after a cycling event which takes from Paris to Brest.

Made of Choux pastry and filled with original Praline Mousseline Cream.

The circle with a hole was meant to resemble a cycling wheel! Viola!

  1. Baby: It involves two Choux pastry rings. First one cut into half = top and bottom. The other Choux ring is placed in the middle and on top of the base. Praline mouse is then pipped onto the middle ring and then sandwiched with the top. When you cut it; it will look exactly like my picture. Thats why the cream looks semi circle. It's not a full layer of cream - that would taste too heavy for my preference. Have a nice day. Thanks for visiting.
